Position Details:

• Employment Type: Full Time
• Education: BSc Degree/Elsenburg Diploma/Higher National Certificate
• Experience: Minimum 5 years cellar operations
• Location: Cape Town, Western Cape
• Department: Manufacturing

Core Responsibilities:

Production Management:

• Oversee daily winemaking operations from grape intake to pre-bottling stages
• Manage harvest activities including grape quality control and pressing operations
• Coordinate wine blending, transfers, and preparation processes
• Conduct monthly stock takes and inventory management

Quality Assurance:

• Implement quality control measures for all cellar activities
• Monitor and minimize wine losses throughout production
• Conduct regular sensory evaluations and quality audits

Safety & Compliance:

• Maintain food safety protocols and cellar hygiene standards
• Coordinate safety inspections and hazard reporting
• Manage compliance with IPW, SAWIS, and other industry regulations

Team Leadership:

• Supervise harvest temporary staff and coordinate schedules
• Facilitate team training on safety and quality procedures
• Manage operational documentation and reporting

Requirements:

• Degree/Diploma in Viticulture/Oenology or related field
• Proven experience in cellar operations management
• Strong understanding of wine production technologies
• Valid code B driver’s license and physical mobility for cellar environments
